Best. Brownies. Ever.
Tonight I made the best brownies ever. Stop it. Don’t believe the batch you made last year for that bake sale was better. It wasn’t.
Cracking the Code to Chewy Brownies was published in the last Cook’s Illustrated. They documented the long process of duplicating the success of boxed brownie mixes. I have wanted to attempt my own brownies for months and was thrilled to see the recipe in the magazine. It called for unsweetened chocolate, bittersweet chocolate, and cocoa power to create a dense and moist brownie.
I knocked these out this afternoon and waited the agonizing, 2.5 recommended cooling hours before cutting into them. The edges have a chewy texture that is far from the crispy, overcooked edge you usually see. It was hard to hold back eating a lot but we did well. Beth did much better than I did. :-)
It is quite a feat to create the best of anything but we are both convinced this recipe produced the best. brownies. ever.
