… this afternoon I was catching up on my blog-reading and I found this post from thekitchn.com for a gorgeous tomato tart made with goat cheese and thyme. (The original is here.) Um…yum. I unearthed a pie crust from the freezer (still intimidated by dough) and ran to the store for tomatoes and goat cheese (I needed milk anyway). A short time later I was pulling this out of the oven, and it was so worth it.
That looks so good. I bought some heirloom tomatoes this week and they are delicious. This tart will be in my belly this weekend.
Regarding dough, my go to pie crust recipe is Ina’s Perfect Pie Crust. It’s super easy to make. I suggest you embrace it.
